The Classics

A few carefully selected botanicals form a classic base for our Hillside Gin, on top of which the locally foraged flavours are floated.


Juniper


Juniper does grow in several places in Shropshire, but it has been in decline for many years and we couldn’t responsibly take any. So, we use high quality Croatian juniper as the classic gin base.

 

Coriander Seed


Coriander seed is the second component of gin, adding both a bit of spice and citrus element. We've found that a mix of Bulgarian and North African coriander gives the smoothest texture.

 

Angelica Root


Angelica is used in most gin recipes both for the aromatic vegetal taste and as a mild fixative to preserve the overall balance of the gin as it ages in the bottle.

 

Lemon Peel


There aren’t any fragrant lemon groves near Ludlow, so we use small amounts of Spanish lemon peel to add the important citrus top note of our gin.

 

Liquorice Root


Liquorice root adds a very sweet taste. We use a small amount to balance the tart local fruits.
